Three Pines co-founder Dimas Pino grew up in Panama watching both of his grandparents on his mother's side die of heart disease. That experience set him on a lifelong quest to understand how the choices we make every day — what we eat, what we drink, how we live — shape our wellbeing. Co-founder Dina Pino, a licensed therapist and Palestinian American, brings the same philosophy: health nourishes the body and the spirit together.

When they opened Three Pines Coffee Company in South Lake Tahoe, they built that commitment into every decision — from the beans in your cup to the cassava flour in your waffle.

Organic Ingredients, Always

We use organic ingredients whenever possible — in our coffee, our food, and our drinks. Organic farming means fewer chemicals in your body, better conditions for the farmers who grow our food, and a healthier planet. Our coffee is 100% organic, fair-trade, and sourced directly from Latin American farms where we know and trust the growers.

The Power of Superfoods

We believe food should do more than fill you up — it should fuel you. That's why we incorporate superfoods throughout our menu: ube potato, cacao nibs, goji berries, coconut yogurt, hemp seeds, wild berries, matcha, and more. You'll find them in our superfood ube waffle, banana split bowl, golden milk latte, oats and chia, parfaits, and beyond.

Gluten-Free & Vegan by Design

We didn't make our waffles gluten-free as a trend. We made them that way because grain-free, cassava-based baking is simply better for your body. All of our waffles are 100% gluten-free, made with cassava flour and packed with vegetables and superfoods. Many of our menu items are fully vegan or plant-based — not as an afterthought, but as a core part of how we think about food.

Fair Wages, Toxin-Free Kitchen

Our commitment to health extends to the people who work here. Every team member earns $18 per hour — no tipping required. Our pricing is all-inclusive of tax and service so there are no surprises. We've also made intentional choices about the equipment and materials in our kitchen — even our rice cooker is toxin-free. Every detail reflects our belief that a healthy business takes care of everyone it touches.
